Homemade Farm Cheese

Two years ago, The Dad made cheese for one of our Christmas Gift Exchange parties.  My sister ended up being the one to go home with it.  She now puts it on her Christmas wish list every year.

I realize there are a zillion male chefs out there, but this cheese makes me want to say, "It's so easy, even a man can make it!" The man in our house makes three things:  Quesadillas, Cabbage Rolls, and Cheese. Three ingredient cheese.  So simple you'll wonder why you've never made it before, cheese.

All you need is whole milk, salt, and white vinegar or lemon juice.  He used vinegar this time around.  Just Google Farm Cheese and a zillion recipes will come up.  The Dad used this recipe, though he didn't let it hang for 2 hours.  Just a good squeeze in a lint-free dish towel did the trick.

Once it was cold, I put it in wide-mouth jars and added olive oil, sea salt, fresh garlic, and rosemary to one.  The other got olive oil, chili flakes and dried oregano.  My sister says it's delicious dumped over a bowl of hot pasta.

We have some left that wouldn't fit in the jars and that's what I'm makin' for dinner tonight.  With a good loaf of bread.  I'm pretty darned excited about it.

She received hers for her birthday last night, but it would be just as fun as a Christmas or hostess gift.
Add a box of pasta, a loaf of bread and a bag salad for someone who just had a baby.

All you need is some scrapbook paper, wrapping paper, or fabric for the lid, and a label for the jar.

My sister's got packed up in a new bowl with a yummy bottle of olive oil, a set of four Muslin-Lined Napkins, and some new earrings that didn't make it into the photos.

Now go make yourself some cheese!

  2. I am assuming you used pasteurized whole milk? Raw milk was a big deal at my cheese making class. It is the best to use but very difficult to find here in our state. I think you give the most thoughtful gifts. Merry Christmas!
