Farmer's Market Tortellini Soup

On our walk home from the farmer's market last weekend, I was rattling off dinner ideas for our goodies. The Kid chimes in and says, "You should make soup!"   He then proceeded to list all of the ingredients that said soup should have in it.  And dinner was born.


You guys, this soup was soooooo good.  I'm still telling him what a great idea it was.  And now I want to make it again asap.

Here's The Kid's farmer's market inspired soup.

Farmer's Market Tortellini Soup 
Printable Recipe

1/2 a yellow onion, chopped
6 cloves garlic, three sliced, three minced
1 bunch chard, chopped, stems and leaves divided
1/2 large zucchini, cubed
2 cans garbanzo beans, drained and rinsed
1 can diced tomatoes with juice (fresh works too)
Rind from a hard cheese (I always keep my cheese rinds for soups)
8 cups veggie broth
9 oz fresh cheese tortellini
Parmesan for serving

In a large stock pot, saute your onions and chard stems until softened.  Add the garlic and cook until fragrant and the sliced pieces are starting to brown.

Add garbanzo beans, tomatoes, chard leaves, cheese rind, and broth.  Let simmer for 15 minutes or so, to let the flavors combine.

Bring to a slow boil and add the zucchini and noodles.  Cook until noodles are done.

Serve with parmesan cheese on top.

We had ours with an amazing loaf of bread from the market, slices of Olympic Provisions sopressata, and a green salad.  So, so good.

  6. Don't you love it when kids come up with great ideas? It's the perfect opportunity to stroke their little developing egos. Kudos to the boy. This soup looks so yummy.

    Did you see that Martha Stewart bashed all home and lifestyle bloggers? She's just jealous because so many people (like YOU) are doing what she did and are way better at it.
