This recipe came from a friend of my mom's. It's another one I've been eating since I was a kid.
I baked up a double batch and took them to The Kid's teachers on the last day of school before winter break.
Here's the recipe with my notes:
Lemon Bread
makes 1 loaf
1/3 C melted butter
1 1/4 C sugar, divided
2 eggs
1/4 tsp almond extract
1 1/2 C flour
1 tsp baking powder
1 tsp salt
1/2 C milk
1 Tbsp grated lemon peel
1/2 C chopped nuts (I didn't have any this time, so went without)
3 Tbsp fresh lemon juice (bottled concentrate is fine too)
Blend the butter and 1 C sugar. Beat in eggs, one at a time. Add almond extract.
Mix together dry ingredients and add to sugar/butter mix alternately with milk. Blend just to mix. Fold in lemon peel and nuts.
Bake at 350 for about 70 minutes.
Mix lemon juice and 1/4 C sugar. Poke holes in bread with toothpick. Spoon juice mixture over hot loaf.
Cool 10 minutes and remove from pan.
My double batch yielded four small loaf pans and one large one.
Yummy any time of the year!

ReplyDeleteYummy recipe--pinning! I bet your kid's teachers were thrilled :) Also glad to hear you liked the baklava recipe--hope you get a chance to make it, but it is fairly time-consuming to put together. But tasty!
