Halo Halo

I made a new dessert last night that was really yummy.

I ripped the recipe from a magazine, but I'm not sure which one.  My plan was to make it for the 4th because it's red, white and blue, but I just didn't get to it.

And just as a side note, I was informed by my brother-in-law that this is not the traditional Filipino way to make it.  So we'll call this the white girl version.  It must not have sucked too bad, 'cause he got to the bottom of the glass.  :o)

Here's the recipe with my notes:
(the amounts are enough for two - I tripled everything for four adults plus three kids)

Halo Halo

1/4 C small pearl tapioca (I found it in bulk - if you can find the large, that would be good too)
1 C berries
crushed ice
1/4 C condensed milk
1/2 C coconut milk

First, my blender SUCKS.  Getting crushed ice from it was impossible.  Next time, I would either use large ice cubes, or refrigerate the milks ahead of time and skip the ice altogether.  If you have a sno-cone maker, that ice would be perfect for this.  Or if you have a Sonic close by (we don't), you could buy the fun ice that they sell.  On with the show....

Simmer tapioca in 1 quart of boiling water until almost translucent, about 10 minutes.  
Let stand off heat 5 minutes.  
Drain and rinse.  
(I did this ahead and refrigerated it)  

Divide berries between 2 tall glasses.
I used strawberries, blueberries and raspberries.


Add tapioca.



Fill glasses with crushed ice.


Add milks.
(I premixed them together)



Serve with a spoon.
Again, this was really yummy, but the ice I used was a pain in the butt to eat.
We all decided it would be FANTASTIC with fresh mango, as well.
The flavor was similar to the Thai dessert, mango with sticky rice, which is one of my all time favorites.
To make something similar to that, don't cool your tapioca.  
Put the warm tapioca in a bowl, top with diced mango, and pour heated milks over the top.
I'm seriously drooling just thinking about it.

  1. My blender sucks at doing ice too, wonder why that is. I keep trying to make smoothies with ice to cut calories but it just ends up chunky. On the other hand, this looks so interesting. I can't imagine putting that combo together but sometimes those make the best recipes, don't they.
