Rice Krispies Dipper Treats

This mom is unplugging for a few days.  I'll be spending the holiday weekend with my family, sans computer.

I've been cooking up a storm in preparation, so I'll have new recipes to share next week.

To those who will be celebrating, have a good 4th of July!  I'll be back next week.  Try not to miss me too much.

I'll leave you with a quick treat that I made up for the kids (and the adults who can't resist - me included).

Rice Krispies Dipper Treats

3 Tbsp butter or margarine
10-oz regular marshmallows
6 C Rice Krispies cereal
Wooden popsicle sticks
1 1/2 C semisweet or white chocolate chips
1 Tbsp vegetable oil
Sprinkles

In a large saucepan, melt butter over low heat.  Add marshmallows and stir until completely melted.  (I added about 1/2 C peanut butter at this point)  Remove from heat.  Add cereal.  Stir until well coated.

Using a buttered spatula, press mixture into a 13x9x2 baking pan coated with cooking spray.  Cool.  Cut into eighteen 3x2-inch bars.  Push one stick into the bottom of each bar.

In a small microwave-safe bowl, combine chocolate and oil.  Microwave on high for 1 to 1 1/2 minutes, stirring every 30 seconds.  Dip bars into chocolate and decorate as you like.  Place on wax paper.  Refrigerate until chocolate is set.

My plan was to use red, white, and blue sprinkles.  I couldn't find any.  So I used multicolored.

  4. Rice Crispie treats are my husband's absolute favorite...like me and the kids get one each and he eats the rest. These look fantastic!
