Sweet & Savory Meatloaf

It's meatloaf night again.  Wahooey.  When I posted the last meatloaf recipe, I may have mentioned my dislike of your standard loaf of meat smothered in ketchup.  Bleck.  So my sister's recipe, to me, is delicious.  And actually, this one was too. 

It was a little wet, so if you like yours to slice up in perfect squares, you may want to go easy on the stir-ins.  But other than that, super tasty. 

The Kid ate enough for an army.  He made it very clear that he wanted the leftovers to remain at home and not be taken to work with The Dad tomorrow.  His words:  "I go crazy for meatloaf!"  I guess so!

This one came out of a magazine, but not sure which one.

Here's the recipe with my notes:

Sweet & Savory Meatloaf

1 1/4 pounds lean ground beef
2/3 C rolled oats
1/2 C sweetened applesauce (I used unsweetened, 'cause that's what I buy)
1 large summer squash, shredded (I used two small zucchini)
2 large carrots, peeled and shredded
3 Tbsp ketchup
1 egg
1 1/2 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 tsp salt
1/2 tsp black pepper

Heat oven to 350.  
Coat 4 small loaf pans (5x3x2-inch) with nonstick cooking spray.
(I used too small and one regular)

In a large bowl, mix together beef, oats, applesauce, squash, carrots, ketchup, egg, Italian seasoning, garlic powder, onion powder, salt and pepper.


 Mix in ground beef.
Spoon into prepared pans.


Bake at 350 for 45 minutes or until internal temp registers 160.
(Mine took about an hour)
Cool slightly before turning out.

We had ours with roasted sweet potatoes, steamed broccoli and applesauce.
As I type that, it sounds like a fall meal.
I suppose when it's cold and rainy outside, fall food sounds good, even if it is the end of July.

  2. Another great-looking post. I can't believe it's 9:20 am and now I'm craving meatloaf. Looks great, and you're right, when it's that cold and rainy outside, fall stuff is the best.
