Here's the recipe with my notes:
Oreo Truffles
Makes 50 1-inch truffles
1 18-oz pkg. Oreos, finely crushed (I used store-brand tuxedo cookies and crushed them in the food processor)
1 8-oz pkg. cream cheese, softened (I used low-fat, just 'cause)
1 lb. white baking chocolate, melted (I used 1/2 pkg. each of Wilton's red and white candy melts)
In large mixing bowl combine crushed cookies and cream cheese.
Beat with mixer on low speed until well blended.
Form 1-inch balls by hand.
I did this yesterday and put them in the fridge overnight so they'd set up good.
Dip balls in white chocolate; place on baking sheet covered with waxed paper.
Refrigerate 1 hour or until firm.
I used two makeshift double boilers for the candy melts.
I just dropped the balls in, rolled them around, and scooped them out with a fork.
For whatever reason, the red had a better consistency and coated better.

Once they had set up, I cut off the excess coating around the bottoms with kitchen shears.
To store, cover and refrigerate.

Boy, those look good! I've heard about them but I didn't know that they have cream cheese. Mmmmm....I love stuff with cream cheese. Now I've got to try them.
ReplyDeleteI use low fat cream cheese too and can hardly tell the difference. One question, and maybe it's a stupid one: Do you crush the cookies WITH the middle frosting on? I can't imagine scraping it off but just thought I'd ask. Yummy recipe!
