My sister's fam came for dinner last weekend, so I went trolling my Dessert Board on Pinterest for a treat to make. It had to be easy and I needed to have all the ingredients on hand. These won.
The recipe says it makes sixteen. I don't have two standard-size muffin tins, and I didn't want to bake them in two separate batches, so I made 12 standard and 12 minis. It was the perfect amount of batter.
When you click over, you'll see that the recipe is for Pecan Pie Cupcakes, but both my sister and I decided they were, surprisingly, not overly sweet and more muffin-like than cake-like. Plus, I ate more for breakfast than I did for dessert, so there ya go.

Super easy and really tasty.
BUT, as I was eating them, for breakfast until they were gone, I kept thinking how good they'd be with rhubarb in them.
Mmmmm, rhubarb pecan pie muffins.
Yep, I need to try that.

ReplyDeleteI'm not sure I would have thought to put rhubarb in them, but I can't imagine that would hurt at all. Love pecan pie (what don't I love, right,...never mind that!). Sounds like an awesome brunch addition.
