Apple-Pear French Toast Cups

I came across a recipe for french toast cups a couple weeks ago, so when I was putting together my weekly menu, I added them as a breakfast idea.  This morning, I went to look for the recipe and do you think I could find it?  Grrr.  I checked my Pinterest boards, my recipe stash, my picture files on my computer.  No luck.  So I did what I do best.  I faked it.

To start, I made up an egg mix just like I would for regular french toast.  I used two eggs, milk, vanilla, a ton of cinnamon, nutmeg and cardamom.


Then I cut circles out of regular whole wheat sandwich bread.



 I dredged them in the egg mix and put them into a buttered muffin tin.




The only bad part about this is the waste of bread.  I put all the remnants in a bowl and I'll either make breadcrumbs or croutons out of them.


I put them in the oven at 350 for about 20 minutes, checking on them twice.

While the french toast cups were baking, I prepped my fruit.
I got the cutest little pears at the farmer's market last Sunday.  I cut up some of those, as well as a Granny Smith apple, and put them in a small saute pan with some butter.




I added more cinnamon and cardamom and a sprinkle of brown sugar.


I cooked them over medium-high heat until they were softened and carmelized.


I filled the french toast cups with the apple-pear mix and drizzled everything with maple syrup.

This was beyond good.

  7. That's an amazing idea! I've never thought to put french toast in cupcake tins. Did the bread get crispy? or was it soggy from the batter still? (I mean, it looks good either way hahah)

  8. They were crispy on the outside around the edges, but still soft like french toast in the middle. Definitely not soggy. :o)
