Baked BBQ Pulled Pork Taquitos With Avocado Sauce


This is another one you're gonna thank me for.



So I think I have about ten chicken taquito recipes pinned on Pinterest.  I was gonna try to finally make one of them last week.  Then I got on my, I'm-not-shoppin-at-the-closing-Ghetto-Safeway-so-we'll-survive-on-what's-in-the-house, high horse.  Then I made those Crock Pot BBQ Pulled Pork Sandwiches.  Then I had leftover meat.  Then I was staring at it trying to come up with a second dinner.  Then it hit me.  TAQUITOS!  Oh lordy, these things were so dang good!

I had about two cups of the shredded pork left.  And since my kids, in most cases, would choose vegetarian over meat, I made some bean and cheese ones, too.  And they were just as delicious.  So here's the ingredients I used for both:

Baked BBQ Pulled Pork and Bean & Cheese Taquitos

Ingredients:

2 C BBQ pulled pork
1 can refried beans
4 oz softened cream cheese, divided
2 C shredded cheddar, divided
10 flour tortillas

Directions:

In one bowl, mix together the shredded meat, 2 oz of cream cheese and 1 C of shredded cheese.

In another bowl, mix together refried beans, 2 oz of cream cheese and 1 C of shredded cheese.

Put 3 to 4 tablespoons of filling in each tortilla.  Wrap and place seam side down on a greased baking sheet, or use non-stick foil.  Spray taquitos with cooking spray.  Alternately, you could brush on some cooking oil.

Bake at 400 for 15 to 20 minutes, or until filling is hot and tortillas are nice and brown.





For the Avocado Sauce, I just mashed three avocados with a fork and stirred in about 1/8 cup of sour cream.  Then I seasoned to taste with cumin, garlic powder, and salt.



We had ours with an iceberg and red pepper salad and tortilla chips.  Cilantro would have been a nice addition if I had found some in the fridge.  Next time.

For those of you who saw my post on Facebook last night about Baby, she's feeling MUCH better now.
She ended up throwing up a total of NINE times in three hours.
The poor little thing.
But she got a good night sleep and seems to be back to normal.
Phew.
