All you need is vinegar, sugar, and water. And thinly sliced, peeled cucumbers. You can adjust the amounts based on how many cucumbers you have, but the vinegar and sugar are always equal parts.
I filled up a 21 cup container with thinly sliced cucumbers. I used a mandolin to make the slicing quicker.
Once you've got your cucumbers ready, add your vinegar and sugar. I used 3/4 C apple cider vinegar and 3/4 C sugar. Then add water until the cucumbers are covered. That's it. Throw 'em in the fridge and let 'em soak up all that yummy goodness.
We had them as-is with our clam and oyster dinner, but then a couple nights later, I made Asian-marinated short ribs, so we doctored up the cucs with some spicy chili-garlic sauce. Mmmmm. Good stuff.

I have two side-notes.
First of all, is anyone having issues getting their pictures into a post in Blogger?
It's taking me forever to write posts 'cause it will only let me add one picture at a time, if at all.
Second, I don't know if this is a Blogger issue as well, but I noticed a few posts back that I'm not getting all your comments in my email inbox anymore.
Which means I've missed some and didn't notice until after the fact.
And those are the ones I've caught on a fluke.

It's happening to people who regularly comment, so it isn't an issue with my email.
