I ripped this recipe from the September issue of Woman's Day. I had all the ingredients on hand, so the kids and I made them yesterday. I'm not a fan of raisins in cookies, but I LOVE dried cherries or cranberries. I didn't have enough cherries, so I used both to make one cup. They do not suck at all.
Here's the recipe:
Chewy Chocolate-Cherry Oatmeal Cookies
Makes 48 cookies
1 1/2 C all-purpose flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp kosher salt
1/4 tsp ground or freshly grated numeg
1 C (2 sticks) unsalted butter, room temp
1/2 C granulated sugar
1/2 C firmly packed brown sugar
2 large eggs
2 tsp vanilla extract
3 C old-fashioned rolled oats
1 C bittersweet chocolate chips (all I had was semi-sweet, but I prefer the bittersweet)
1 C dried cherries
Heat oven to 350.
Line 2 baking sheets with parchment paper.
In a bowl, whisk together the flour, baking soda, cinnamon, salt and nutmeg.
Using an electric mixer, beat the butter and sugars until light and fluffy, 2 to 3 minutes.
Beat in the eggs, one at a time, then the vanilla.
Reduce speed to low and gradually add the flour mixture, mixing until just combined.
Using a large spoon, fold in the oats, chocolate chips and cherries.
Drop slightly rounded tablespoons of the dough onto the prepared baking sheets, spacing them 2 inches apart.
Bake, rotating the sheets halfway through baking (I didn't do that), until the cookies are golden brown around the edges, 12 to 14 minutes.
Let cool on the sheets for 5 minutes before transferring to wire racks to cool completely.
Here they are ready to eat:
Which is exactly what I'm going to do right now.
They look awesome. Do you know my husband doesn't even understand (let alone has tried) licking the beaters. Isn't that a form of child abuse, to live in a house where you didn't lick the beaters?? Anyway, these look great and I wish I had some right now.
ReplyDeleteWhat cute kids! Licking the beaters...classic! I love seeing your kids in your pictures. Can't wait to see the baby pics. Oh yeah, the cookies look good too.
ReplyDeleteThese look quite delicious! And, your photos are adorable. I could definitely bake with sous-chefs as sweet as those.
ReplyDeleteWe are making these tonight - can't wait
