This dinner was SO GOOD. I got the recipe for the potatoes here.
I substituted ground cumin for the seeds 'cause it's what I had. I also left off the parsley 'cause there was none in the fridge. The only thing I'd do differently is wait to add the chorizo until about the last 10 minutes. It got super crispy and I think it would have been better with some chew left. Other than that, these were beyond delicious and super easy. It was all about the baby yellow potatoes. Don't substitute russet. These melted in your mouth like butter.

To go with, I sauteed up some sliced garlic in olive oil and then added chopped collard and beet greens.
Then I seasoned 'em up with salt and pepper, doused everybody with some red wine vinegar and threw a lid on till they were wilted.
The Dad got a fried egg on his.
The kids got scrambled eggs.
The Mom got a slab of naan bread.
Seriously good.
This is definitely my kind of meal. Looks great.
