Jalapeno Popper Chicken Roll-Ups


I saw a picture of these last week and wanted them so bad that I made 'em that night.  I sat down to take my first bite, so excited, put the first forkful in my mouth, and didn't have a single taste bud working.  Nada.  My cold made it so I couldn't taste a thing.  I could have cried.


Ah well, I'll just have to make them again.  The Dad said they were really good.  I omitted the jalapenos for the kids and The Girl ate hers dipped in ranch.  She asked me yesterday if I could make them again.

I made a few changes.  I didn't have any cream cheese, so I subbed ricotta.  I also precooked the bacon and crumbled it, rather than putting in a whole chunk of it raw.  The panko didn't want to stick, so next time I'd have some melted butter to brush on the chicken to help it adhere better.

To go with, I sliced up some red and purple potatoes, seasoned them with cumin, paprika, salt and pepper, then baked them until they were fork tender.



Then I sprinkled on some shredded cheese and remaining crumbled bacon and stuck them back in the oven just long enough to melt the cheese.



Yeah, couldn't taste those either.  
Booooo.

I also made a salad with watercress, cilantro, and fresh pineapple.
I used olive oil, fresh lime juice, and salt and pepper to dress it.

Yeah, that definitely needs to happen again.

  2. Oh that looks so good! I would cry, too, if I couldn't taste bacon and cheese and all of that yumminess. Those potatoes would be good all on their own, I think. And your salad seems perfect to pair with the richness of the two dishes. I knew I should have checked my blogroll before I started cooking!

  3. That looks like a delicious meal!! Too bad you couldn't taste it. I would make it again so that I could eat it all!! I think those would be great in a smaller size for appetizers.
