Feta, Honey & Date Spread

This recipe was in the April issue of Better Homes and Gardens.  I needed an app to take to my sister's for Easter, so I thought I'd give it a whirl. 

It wasn't quite wet enough to qualify as a "spread", but it was still delicious.  I served it with sliced baguette, but it was pretty crumbly for that.  My sister suggested using it as the base for a panini.  It would be delicious with pears on some crusty bread.  Mmmmmmm.  I'll definitely make it again and try it on a sammie.

Here's the recipe:

Feta, Honey & Date Spread

1 C feta cheese (4 oz)
1/2 C toasted almonds, coarsely chopped
1/2 C pitted dates, chopped
2 Tbsp fresh marjoram or 1 Tbsp fresh thyme, chopped (I used thyme)
2 Tbsp coarsely chopped or sliced green olives (okay, this sounded weird to me, so I left them out)
2 tsp finely shredded lemon peel (I think orange would be yummy too)
1/4 C honey
1/4 tsp cayenne pepper

I even shelled my own nuts.  Ever seen an almond in it's natural habitat?




They were a pain in the butt to crack.  I don't recommend it.





In a serving bowl gently stir together feta, almonds, dates, marjoram, olives, and lemon peel.


In a small microwave-safe bowl, combine honey and cayenne; warm in microwave 15 seconds.


Drizzle over spread; fold gently to combine.





Eat!

  1. The combo of flavours sounds amazing and I just picked up some honey this morning. I heard on TV that honey in supermarkets has been processed so much that it doesn't have any pollen so I went to the local apiary (is that the right word?) bee place? That works, right. Anyway, I picked some up today so this must be destiny.
