Mediterranean Taquitos

These were soooooooo good.  So good.  The recipe comes from one of my regular blog reads and every recipe I've ever tried of his is yummy.


The list of ingredients for the chicken marinade is long.
Really, really long.
But it's mainly pantry spices, and the chicken was amazingly delicious.
Like, I was tempted to forget the whole roll up thing and just eat the chicken by itself.
Delicious and totally worth giving your teaspoon a workout.


I would have had to make a special trip to Trader Joe's for the lavash, so instead I just used flour tortillas.
I didn't figure it would make that much of a difference.
Also, I served it up a bit differently than the original.
I made a big salad for the base and had the sauce on the side, instead of dumping everything up on top.
I never know from one day to the next which kid will decide they hate something, so it's easiest to let them dress their own plates.

 

Seriously, the salad would have been good with the chicken sliced up on top for dinner.
I strayed a bit again and used what I had.
Napa cabbage, spinach, tomatoes, cucumbers, bell peppers, and feta.



The sauce was friggin' delicious.
It's a creamy, garlicky, sun-dried tomato, feta mix, with sour cream as the base.
So.  Good.
I omitted the black olives, 'cause I don't care for them at all, and the onions, because of The Dad's dislike, but I used everything else.
So, so good, I could have eaten it with a spoon.
You could thin it out with some milk and use it as a salad dressing, if you didn't wanna fry up the taquitos.
In fact, I think that might just be goin' on the next meal plan.

  1. I will have to try this! Speaking of meal plans. I am at a loss anymore about dinner. I am tired of trying to figure out what to make for dinner. I have 3 kids and a husband and they all have a list of things they don't eat, so it makes it hard for me to come up with meals that everyone will be happy. I am tired of making the same meals. But I am lazy when it comes to meal planning...lol. I just want it all laid out for me. SO.......where are your meal plans for the week and the next.....and the next?? lol

  3. These look delish! Did you actually fry them? That part freaks me out and I know a lot of people who have an aversion to frying food at home. It seems like such a hassle to deal with the oil after all is said and done. But it sounds like these guys are worth all of the trouble. I like the salad beneath the taquitos too.
