Champagne & Mushroom Risotto

I said sporadic, not absent.  I could post three one day and none for a week.  You never know what you'll get.  :o)

The Kid is back at school and The Girl is down for a nap, so I was forced to take a break from working on that room.  Before I go start on the sink full of dishes, I wanted to share this recipe.

I had no intention of posting this dinner.  I didn't take any pictures while I was cooking.  Then I tasted the risotto in the pan when it was almost finished.  Then I knew, it must be shared with the world.  Okay, a bit dramatic, but it was really, really good.

I had an open bottle of Champagne from NYE left in the fridge, so when I saw this recipe, I was all over it.  It came from a blog I read on a regular basis.  Click here for the recipe.

I didn't have any dried mushrooms, so I had to skip that part and just use the fresh.  I also had open containers of both chicken and beef stock in the fridge, so I mixed the two, rather than just using chicken.  Other than that, I stuck to the recipe. 


To go with it, I made Chicken Paillard, Roasted Brussels Sprouts With Pears, and mixed greens with pecans, oil and vinegar.  Deeeeelicious dinner.

  1. Oh come off it,...that looks amazing. I love risotto and mushrooms and champagne. ha ha Sounds like you made this for me. (okay, I agree there isn't much that doesn't appear on my love list, but whatever).

  3. Oh my that looks good! I love roasted brussel sprouts but have never tried them with pears. Sounds fantastic! I am so impressed that you cook so much while pregnant! My family goes on fend for yourself mode the last 2 months of pregnancy!:) Thanks for linking up to our party.
