Beef Flautas + Our Latest Meal Plan

I don't know what makes these flautas, opposed to fajitas, but whatever you wanna call 'em, they're finger-lickin' good.

This is another one of my handwritten index card recipes, meaning, I have no idea where it originally came from.  I had four stars on it, but probably hadn't made it since my 20's.  I think I have too many recipe sources, what do you think?

Anywho, we had them last week and they were deeeelicious.  Guess my taste buds haven't aged the fifteen years that the rest of me has.

Here's the recipe with my notes:

Beef Flautas

1 Tbsp chili powder
2 tsp paprika
1 tsp oregano
1/2 tsp each of basil, thyme, garlic powder, onion powder, salt and pepper
1 lb thinly sliced sirloin steak (I used the beef that's pre-cut for carne asada.  It's super thin, but still in big pieces)
3 Tbsp veggie oil
1 thinly sliced onion
diced tomato
1 thinly sliced bell pepper (I used two + three jalapenos)
Soft corn tortillas (I had flour)

Blend all herbs and spices together and toss with the meat.  
(I did this in the morning and just stuck it in the fridge till dinner time.)  

(Also, if I had thought far enough ahead, I would have saved some of the spice mix for the veggies.  I ended up seasoning them up with something similar, but if you think about it, just pull a tablespoon or two and set it aside.)

Heat the oil and saute the meat for 5 minutes.  
Remove and keep warm.  
Saute the veggies quickly, adding the tomatoes at the end.

I decided I wanted to cook everything on the grill, so I left the meat in the large pieces and used a grill basket for the veggies.

To serve, wrap everyone up with your favorite toppings.
We had refried beans, cilantro, pepper jack, cheddar, sour cream and salsa.
I love Mexican food.

  • Clean Out The Fridge Stirfry

  2. These look great--Mexican is my most favorite food!! I hardly ever make it since we have a mexican restaurant on every corner--gotta love tex-mex!!! I wish that I was dedicated enough to make a meal plan, usually I just get a craving and that it what we have!!

  4. Wow, this looks good, Mindy, and it looks like you enjoy ample cilantro in your Mexican food as much as I do :) When I was in college one summer, I worked in the kitchen of a Tex-Mex restaurant. Hard work, but good food!
