Game Day Apps: Fig Jam & Brie Bites

No, I didn't fall off the face of the earth.  I got home from my weekend trip at the Rock Farm to a very sick dad, so I've been trying to make sure I'm pulling my own weight with the kids and the house since Sunday afternoon. 

After spending over three hours in an urgent care clinic last night, it was confirmed that he has a tapeworm.  Nasty!  To make it even more disgusting, the doctor called this evening to inform us that it's a fish tapeworm that he would have consumed about a month ago.  It then layed eggs inside of him and has been in there growing ever since.  Did I mention nasty?  Without wanting to make you vomit, it has spent the last three days attempting to make its way out.  Oh dear God that is disgusting.  So anyhoo, I've been busy with the kidlets.

Now, onto a more enjoyable topic.  College football season is under way.  Before meeting The Dad, I'd never watched a football game.  I am now an Oregon Duck fan by association.  As are our children and extended family.  So every Saturday will be spent watching the game until the season is over.  I'm proud to say I can actually watch a game and know what's going on now, but I'm in it for the food.  Big surprise, eh? 

Two weekends ago was the first game and we watched it at my sister's house.  I took along three appetizers.  I'll post them all, starting with this one.  Remember the fig jam and brie sammies I made not too long ago?  I was thinking about doing something similar when I came across a recipe for something like the sammie in appetizer form.  Click here to see the original on my Appetizer Pinterest board.

Here's how I did mine:

I sliced up the brie and put it on naan bread.
I baked it in a 350 degree oven until the cheese was warm and soft.
Once it had cooled a bit, I spread it with the fig jam.
The fresh thyme idea came from the original recipe and it was really good with it.




Next, it was just a matter of cutting them up into serving-sized pieces and putting them out on a platter.


I don't have the words to describe how good these were.
I think my brother-in-law ate his weight in them.
I may have had a hand in clearing out the platter as well.  :o)
