Eggnog Pancakes

I had some leftover eggnog in the fridge from a recipe, so I used it to make pancakes this morning.  Not inventing the wheel, but thought I'd share since it's an easy upgrade.  It makes REALLY good french toast too.

When mixing up your pancake batter, just use eggnog instead of, or in addition to, the milk.  I used about a cup of nog for two cups of baking mix, and then added milk to get the consistency I wanted.  I also added a ton of nutmeg to the mix. I had leftover eggnog icing in the fridge as well, so that's what we used in place of syrup.  They were so yummy.

And since it is the week before Christmas, here's the kids' pancakes:







The scarf and nose are both cut from a fruit strip, candy eyes, M&M's for the buttons, vanilla yogurt at the bottom of the plate for snow, bananas, and eggnog icing drizzled around the plate.
They LOVED this one.

  2. YUUMMMMM. And I love the snowman! Hmmmm... wonder if I could use my Buttermilk and do the same thing? Duh. Buttermilk Pancakes are a norm, aren't they? Lol. Well, I'm going to make the real thing, not just the add water, and try it!
