I make a crispy chicken recipe all the time that is delicious as a main entree. I used that tonight for our wraps. The type of cheese is interchangeable based on what's in the fridge and what I'm in the mood for. The seasonings can be adjusted to your liking as well. If I have them, I'll throw in some fresh herbs with the bread crumb mixture. And if I'm feeling really ambitious, I'll use homemade bread crumbs. Tonight I used a combo of store bought bread crumbs and panko.
Here's the recipe:
Cheese Crisped Chicken
1 1/2 - 2 lbs chicken breast, cut into strips
1/3 C butter, melted
1 C bread crumbs
1/2 C shredded cheddar
1/4 C shredded parmesan
1/2 tsp salt
1/3 tsp pepper
1/2 tsp garlic powder (alternately, you can add fresh garlic to the melted butter)
In a shallow dish, add bread crumbs, cheeses, and seasonings.
Stir to combine.
Melt butter in a bowl and throw the chicken in for a swim.
Dredge chicken in bread crumb mixture.
Place chicken in a baking dish, sprinkle with any remaining crumb mixture and drizzle with any remaining butter.
Bake at 350 for 20 to 30 minutes, depending on the size of your chicken pieces.
We had watermelon and oven fries to go with our wraps.
For the fries, I cut the potatoes into thin wedges, put them on a baking sheet and drizzled them with olive oil. I seasoned them with kosher salt, pepper, garlic powder and paprika.
I baked them for 35 minutes at 375.
For the wraps, you can "have it your way". My way was lettuce, spinach, red bell pepper, cucumber and shredded white cheddar (you know, 'cause the cheese in the bread crumbs isn't quite enough). I used honey mustard dressing. The rest of the family went with ranch.
