Whole Wheat Chocolate Blueberry Cake

It's new recipe treat time again.  My brother-in-law invited us to dinner last night and when I asked what I could bring, he said dessert.  So this is what I decided on.

This is another one from Better Homes and Gardens.  I clearly rip a ton of recipes from that magazine.  I think it's the photos that sell me.  Plus, this one has whole wheat in the title, so it's gotta be good for ya, right?  Ha.

Here's the recipe:

Whole Wheat Chocolate Blueberry Cake

1 C whole wheat flour (if you're not a fan, substitute half or all with white flour)
1 C sugar
6 Tbsp unsweetened cocoa powder
3/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
3/4 C water
1/2 C fresh blueberries
1 egg
1 C frozen light whipped dessert topping, thawed (I assumed this meant Cool Whip, so that's what I used)
1/2 C semisweet chocolate pieces
Fresh blueberries or Blueberry Sauce (see recipe)

Blueberry Sauce

1/2 C frozen light whipped dessert topping, thawed
1/2 C fresh blueberries 


Cake:

Preheat oven to 350.  
In a medium bowl combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.


In blender combine water, blueberries and the egg.


Cover and blend until smooth.


  
Add to flour mixture.  
Whisk until well combined. 


Pour into greased 8x8x2-inch pan.
Bake 30 minutes or until toothpick inserted in center comes out clean.
Cool completely on wire reack.
Invert onto serving platter.

In a small microwave-safe bowl combine dessert topping and chocolate pieces.
Micro-cook, covered, on 50 percent power (medium) 1 minute.
Stir until smooth.


Pour onto cooled cake.


Spread evenly.



Cut cake into squares to serve.
Top with fresh blueberries or serve with Blueberry Sauce.

 Sauce:

In blender combine whipped topping and blueberries.  
Cover and blend until smooth. 

At this point, I decided rather than letting the Cool Whip container take up space in the back of my fridge for months, I'd use it now.  
So I folded the blended sauce into what was left in the tub.
 

Before I show you my slab, I'm gonna show you dinner.
'Cause it was G, double O, D,  GOOD.

He made sinigang, a Filipino soup.
It's a tamarind broth and this time he used radishes, brussel sprouts, long beans, spinach, and pork.
And it's delicous.

So good.

 And this bowl of mango we had to go with it is making my mouth water right about now.
 That beer in the background doesn't look half bad either.

Why is we always want what we can't have?

  1. What a combo. Sounds amazing to me. I'll have to put it on the list of things to try when I'm no longer,.....uh,.....when I'm lighter. :) OR,...maybe I'll offer to bring dessert to my nephew's birthday. Hmmmmm,...even better.
