Grilled Lemon-Chive Potatoes

These are the taters we had to go with our cheddar brats and Celery-Blue Cheese Salad.  As usual, I have no idea where I originally ripped the recipe from.  The accordion folder that I keep new ones in has recipes in it that I cut out years ago.

Here's the recipe with my notes:

Grilled Lemon-Chive Potatoes

6 medium red potatoes
6 Tbsp unsalted butter
6 Tbsp chopped fresh chives
1 tsp grated lemon peel
Salt and pepper
Nonstick spray
*I would use fresh garlic in the butter next time*

  Boil potatoes in pot of salted water until tender, 25 to 30 minutes.  Drain.  Cut in half.



Stir butter, chives, and lemon peel in saucepan over medium heat until melted.  Season with salt and pepper.  Brush some butter on potatoes.





Coat grill or grill pan with nonstick spray.  (I used the tray from my broiler pan.)  Heat to medium-high.  Grill potatoes, cut side down, until crisp, 10 to 12 minutes.  Rewarm extra chive butter.  Transfer potatoes to a platter and drizzle with remaining chive butter.
